BoO Sauce (so good its scarey)

INGREDIENTS:
4 large tomatoes or about 2 pounds of your favorite tasting maters
fresh cilantro
vinegar
Lime juice
1 onion
1 bell pepper
1 jalapeño
Salt and pepper



DIRECTIONS:
Wash the tomatoes and peppers REALLY good.
Put the bobs in a mixer and blendo. (I would say puree but this is a Mexican theme) Add the cilantro, onion, bell pepper, and jalapeño. Salt and pepper a little and add 1 teaspoon of vinegar and 1 tablespoon of lime juice. Puree -errr I mean 'blendo' again.


Get Jiggy with it:
Here is where you can get very creative. (Dont say gourmet- you cant mix mexican and french or all you'll gets a gay burrito. -Nobody wants that) Chop up a mango or a peach and add about 1/4 cup of them to your base.

For you purist: You need to chop some hickory wood. Build a nice fire in a small enclosed area. Put 3 cups of water some lime juice and your chopped fruit in a bowl and place out of the heat of the fire but in the path of the smoke. Leave there for about 30 minutes making sure the water doesn't boil.

For the rest of us: Add 2 drops of liquid smoke when you add your fruit. It is not cheating! I promise is will taste the same and you wont have blisters from choppin hickory! (nobody wants that.)

cook:
Dump fruit, salsa base and all in a sauce pan and heat to a simmer. mmmmmm just thinking about it makes me hungry. Let simmer for 5 minutes to bond the flavors and your done!


Storage: Best to put this stuff in some mason jars and keep in the frig but don't be lazy heat it back up for each serving.


Always serve salsa warm! Cold salsa is for tourists!
